Whether your mornings are perfectly orchestrated or you are running out the door to make it to work on time, an easy, grab-and-go breakfast can help start your day off right!
These make ahead breakfast ideas are perfect for prepping the night before or even a couple of days in advance. No matter what your mornings are made of, having delicious food in hand for the most important meal of the day is possible.
Breakfast Snack Box
INGREDIENTS
- Yogurt
- Fresh Fruit
- Boiled Eggs
- Granola
Banana Pancake Muffins
(makes 12 muffins)
INGREDIENTS
- 2 ripened bananas, mashed
- ¼ cup melted unsalted butter
- ¾ cup milk
- ½ cup brown sugar
- 1 egg
- 1 tsp vanilla extract
- 2 cups pancake mix
- 1 tsp cinnamon
- ½ cup mini chocolate chips
METHOD
Preheat oven to 350. Grease muffin tin or use liners.
Mix bananas, butter, milk, brown sugar, egg, and vanilla extract until well combined. Add flour and cinnamon to mixture (do not over mix). Fold in chocolate chips.
Fill muffin cups to ¾ full.
Bake for 15-20 minutes or until an inserted toothpick comes out clean.
Egg Bake Sandwich
INGREDIENTS
- 10-12 eggs
- 1 ½ cups shredded cheddar
- 1 cup diced ham
- Vegetables of choice: (optional)
- Spinach
- Bell peppers
- Onions
- Mushrooms
- Salt and Pepper to taste
METHOD
Preheat oven to 400.
In a greased 9×13 baking dish, sprinkle half of the shredded cheese, diced ham and vegetables of choice. Crack the eggs over top ensuring to space them evenly. Salt and Pepper to taste. Top with remaining shredded cheese.
Bake for 15–20 minutes or until eggs are cooked to desired doneness.
Using a biscuit cutter or tool of choice cut out a piece of egg bake to fit each English muffin.
If prepping for the next day, let cool, wrap in foil and refrigerate. To reheat, leave in foil and heat in 400 oven for 12-15 minutes or until heated all the way through.
Condiments may be added once reheated: mayonnaise, hot sauce, pickled jalapenos, etc.
